The Story of Pahadi Urad (Black Gram)

This is the backbone of the famous Garhwali dish 'Chainsu'. Pahadi Urad is distinct from the distinct Urad dal of the plains; it has a stronger aroma and a robust, earthy taste. Traditionally, the pods are harvested and beaten with sticks to release the black seeds. It is considered a 'heavy' food, meant for days of hard labor in the fields. The grinding of Urad dal on the 'Silbatta' (stone grinder) is a morning ritual in many village homes, the rhythmic sound echoing through the valley.

How to Cook: Traditional Chainsu

  • 1Dry roast the Urad dal in an iron pan until fragrant. Grind into a coarse powder.
  • 2Heat oil, add Jakhya and garlic.
  • 3Add the dal powder and roast again for 2 minutes.
  • 4Add water slowly while stirring to avoid lumps. Bring to a boil.
  • 5Simmer for 30-40 minutes in an iron pot (crucial for black color and iron fortification).
  • 6Serve with red rice.
