The Story of Gahat (Horse Gram)

Known as the 'Miracle Pulse' of the Himalayas, Gahat (or Kulath) is legendary in mountain medicine. It is famously said in Pahadi villages that 'Gahat breaks stones', referring to its incredible ability to dissolve kidney stones naturally. Grown in the dry, rocky terrains of Garhwal where other crops fail, Gahat is a survivor crop, and it passes that resilience to those who eat it. It is traditionally consumed in winter because of its extreme heat-generating properties. Village councils often serve Gahat soup during long deliberations in the cold open air to keep the elders warm and energetic.

How to Cook: Garhwali Gahat Ka Phanu

  • 1Soak Gahat dal overnight. Grind it into a rough, coarse paste (silbatta preferred).
  • 2Heat mustard oil and crackle Jakhya seeds.
  • 3Sauté the lentil paste with ginger, garlic, and wild turmeric until it turns brown.
  • 4Add water and let it slow-cook for at least an hour. The longer it cooks, the earthier it tastes.
  • 5Finish with a tempering of Gandrayani and dry red chilies.
  • 6Enjoy with Mandua (Finger Millet) Roti for a complete Pahadi meal.
