The Story of Bhangjeera (Hemp Seeds)

Often misunderstood due to its botanical relation to cannabis, Bhangjeera (Hemp seeds) is completely non-psychoactive and is a culinary staple in Uttarakhand. These tiny, greyish seeds have a distinct nutty flavor. They are roasted and ground with lemon juice and salt to make the iconic 'Bhaang ki Chutney', which is an essential accompaniment to every festive meal. In the harsh winters, the high oil content of these seeds provides essential fats to the body. It is cultivated widely in the hilly districts and is an eco-friendly crop requiring no pesticides.

How to Cook: Pahadi Bhaang Ki Chutney

  • 1Dry roast a cup of Bhangjeera seeds until they pop and release aroma.
  • 2Grind them on a stone silbatta with fresh coriander, mint, green chilies, and garlic.
  • 3Add lemon juice (Galgal lemon is best) and salt.
  • 4Mix with a little water to form a thick, coarse paste.
  • 5Serve with Madua roti or Rice.
